Surrounded by the Kyushu Mountains, people in Hitoyoshi Kuma region traditionally preserve the mountain vegetables by drying in the clean air. The vegetables are utilized in everyday cooking and sometimes special dishes for festivities. The taste of this simple but nutrition packed dried mountain vegetables represents the culinary tradition of our homeland. And sadly, we are losing this original and natural food culture in the modern days. One of our founders, the lady of the long-established tea and mountain vegetable dealer always wants to revive the mountain vegetables, that are the roots of our culinary traditions. We agree with the hypothesis that once tasted in the child-hood, you will love them when you grow up. We provide the secrets in preparation taught by the harvesters. Dried Mountain Vegetables
Ingredients: Dried Shiitake Mushrooms (Log-grown, Hitoyoshi-Kuma) Dried Fiddlehead Fern Stems (Hitoyoshi-Kuma) Sun-dried Bamboo Shoots (Hitoyoshi-Kuma)

How to Prepare the Dried Vegetables
Dried Shiitake Mushrooms
Place the dried mushrooms in a container with rid. Pour water until mushrooms are covered and refregirate at least for 10 hours. The soakin water
can be used as broth (dashi).
Dried Fiddlehead Fern Stems
Boil water in a large pot and add the fern stems. Boil for 5 mins stirring. Turn the heat off and leave until it cools down. Wash with hand under
running water and leave in fresh water for at least 12 hours, Change water occasionally until the water becomes clear.
Dried Bamboo Shoots
Soak bamboo shoots in a plenty of water for at least for 8 hours. Transfer the bamboo shoots to a pot with soaking water and heat for 1 hour at the
low heat. Leave in the water util it gets cool. Wash with running water and soak again in the fresh water for 30 mins.
